Recipe of the Week
Serves 4. One serving equals 1 protein, 2 vegetables, and 1 dairy.
- 1 cup (8 oz.) lean ground beef
- 2 cups tomatoes, diced
- 1 cup celery, chopped
- ½ cup green onion, chopped
- 1 cup green pepper, chopped
- 2 cloves garlic, minced
- black pepper cayenne pepper
- 3 cups spinach leaves
- 1 cup (8 oz.) cottage cheese (1 % or non-fat)
- 8 oz. firm tofu
- ½ cup (2 oz.) mozzarella cheese, shredded
Preheat oven to 400F. In a skillet, brown beef. Add tomato, celery, onion, green pepper and garlic. Season to taste with black pepper and cayenne pepper. Let simmer. In a baking dish, layer sauce , spinach, cottage cheese, and tofu. Top with cheese and bake for 1 hour.
